THE ARCTIC CIRCLE

Living above the Arctic Circle

Plus a lovely video of the Magnificent Orca with their families

A tribute to one of the most intelligent predators of the ocean.

Orcas stick together, they protect their young, teach them valuable lessons, hunting skills that can even attack, outsmart and destroy a Great White in seconds! and above all they have a softer caring side, can play and have fun.

Orca is King of the Seas and a shining example of nature at it's most powerful and caring at the same time.

Mankind has forgotten some of these qualities and should look to nature again.

Penguin border

How on Earth did those Penguins get in there, I don't think they have Penguins up in the Arctic! Do they Children?

THE ARCTIC CIRCLE- has a special dessert named after it.
This video is called Cooking with Candra, she has some wonderful recipes on You tube.

A Baked Alaska is a delicious alternative to store bought ice cream cakes. Layer a brick of ice cream with pound cake and meringue and bake it in the oven. It is soooo fabulous and everyone will enjoy this at your next party... not just the kids!

I use my own recipe for the pound cake, which you can see the video here:

Baked Alaska
THE BAKED ALASKA one of my favourite cakes /icecreams. Diddilies own children loved it and it is so easy to make, also there are many ways you can doctor it up. Just pop onto Google Images and you will find hundreds of different fillings and decorations in Images.
THE ARCTIC CIRCLE
Map of the Artic Ocean and the North PoleThe northernmost point on our planet is called the North Pole. It lies at the centre of the Arctic Ocean, which is permanentry covered in a thick ice-cap. (we hope) Bordering the ocean are the bitterly cold coasts of North America, Europe and Asia. To reach the North Pole, you either have to travel beneath it in a submarine or cross over the ice-cap, battling blizzards that I definitely have never seen the like, but for all its frozen wasteland, many people have settled there.
This frozen land includes Alaska, belonging to the USA, the Canadian Arctic, Greenland, Norway, Sweden, Finland and the long coastline of Russia. The lands all around include high mountains, frozen plains, called the tundra. The topsoil of the tundra actually melts in the summer which is very brief, but during this time wildflowers blossom around the pools of water. In mid winter the sun doesn't rise and in mid summer the sun never sets.
Whales, Walruses, Seals and Polar Bears swim in the rich Arctic seas ....

North to Alaskan Cookery

Rosebay Willowherb
When I was looking through the net for something else interesting from Alaska, something more that its it's myriad of small Islands and bitter winds. Well all that's by the by, for what do I find on the page. A Flower, yes a flower called the Rosebay Willowherb/Epilobium angustifolium.
And that this Rosebay Willowherb or Fireweed as they call it, is a native to, and, growing in Alaska and that it can be used to make, sweets, syrups, jellies, and even ice cream are made from fireweed. You can imagine my surprise when through my study window I can see remnants of the Rosebay Willowherb, Ramson (wild garlic) and Spinach melting into the Autumn deluge that has arrived, with or without permission of the Ryder Cup Golfers.
So I thought if it's good for the Alaskans then it will be fie for everyone. So here is the Recipe, I didn't write it, it came from the :

Rosebay Willowherb, Ramson and Spinach Soup.

Rosebay Willowherb, Ramson and Spinach Soup is a modern British recipe for a classic soup of rosebay willowherb leaves, spinach and ramson leaves (wild garlic) cooked in chicken stock with bacon and onion that's finished with cream. The full recipe is presented here and I hope you enjoy this classic British version of: Rosebay Willowherb, Ramson and Spinach Soup.

The jury is still out as to the value of rosebay willowherb (fireweed) greens. Many find them unpalatable bitter, but personally I find them quite edible and will eat them raw even in the middle of summer. But then I'm used to a whole range of African greens and have become accustomed to bitter tastes. As a result, I suggest you first try this dish in spring when the rosebay willowherb greens are young and tender and less bitter. This recipe combines them with spinach and wild spring garlic, ramsons

Ingredients

100g of Rosebay Willowherb
300g spinach, trimmed
10 ramson (wild garlic) leaves, shredded 25g butter
25g flour
1 small onion
1 rasher of bacon, cut into strips
salt and black pepper, to taste
500ml chicken stock
 250ml single cream

Rosebay Willowherb, Ramson and Spinach Soup Preparation:

Celtnet recipes chicken recipe divider

Method:

Bring a pan of lightly-salted water to a boil then add the rosebay willowherb and blanch for 2 minutes. Drain immediately (this removes any excess bitterness).

Wash the spinach, remove any tough stems then add them immediately to a pan (do not drain), along with the shredded ramsons, set over medium heat. Cover the pan and sweat the leaves for 1 minute.

Add the butter to a pan and use to fry the bacon and onion until the onion softens then stir-in the flour. Slowly add the stock, stirring all the time until you get a smooth soup base. Add all the greens and simmer for 5 minutes. Blend with a hand blender then add the cream. Season to taste and serve immediately. If desired the soup can be garnished with toasted slivered almonds or croutons.

LANDS OF THE ARCTIC

Arctic Hare Summer
The Legend of the Arctic Hares
And why they Change Colour in Winter Time

Along time ago in the Arctic forest lived a rabbit. She was a little brown rabbit. She was born when the sky was blue, green, pink, purple and orange.

The little rabbit liked the colours of the sky so much she wanted to be those colours. The rabbit tried and tried, but she just couldn't change herself into these colours.
It was getting close to winter, the little rabbit needed food. Mama rabbit told her daughter . " Now go get food!"

As the little rabbit left she asked her Mom " Is it safe out there ?"
" Yes " answered Mom .
When the little rabbit came back home it was raining. For 5 days it rained none stop. On the 6th day the rain stopped . A beautiful shinning rainbow appeared in the sky.
The little rabbit looked at all the beautiful colours in the sky and wished he could be all those colours. The little rabbit was very upset that he would never be able to change colours.

Arctic Hare Winter
Just then snowflakes fell on her back. She tried to shake them off but just couldn't. She noticed she was now white. The little rabbit felt very excited because she was no longer brown and was a beautiful white . Still she was a little disappointed because she wasn't the colours of the rainbow. Mostly she was proud of her white coat.

Today if see an Arctic hare you'll remember that it turns white in the winter because the snow flakes stuck to his back. Now all Arctic hares turn white in the Winter.

OF ARCTIC LEGENDS

Duck from the Arctic
How the Arctic Duck got its Sharp Beak

One golden summer day a mother duck hatched her eggs. Out came two baby ducklings. Then out came the cutest baby duckling.
When the baby duck was five he made two more friends. They were Whale and Seal.

One damp and sunny day Taky's mom tried to teach him how to fly .
Every day Talky, Whale and Seal played on the silver icebergs and in the golden ponds.
One night Talky made a new friend. His name was Pablo the penguin. One Christmas Eve Talky and Pablo ate dinner. Then Talky got a weird feeling on his bright beak. As the night went on Talky and Pablo watched the dancing lights. Then Seal came and told Talky that all the ducks beaks have gone weird.
"Even yours," he said to Talky.
"Mine's gone bad too?" asked Talky.
"Yes, and it's pointy too," answered Seal.
"Also, it's not yellow. It's red with a bit of orange," said Pablo.

 Duck in the Snow
Then they went to see Whale. By then all ducks had normal beaks. All except for Talky. The other ducks hadn't eaten very much of the magic fish because they didn't like the taste. But Talky had eaten a lot because he liked it. Talky told the other ducks that he eaten a magic fish that made him have a tiny sharp beak.
Later, he met another duck. They had three babies and they all had tiny sharp beaks. Then another duck with a curved beak had babies that had tiny and sharp beaks. All of the ducks ate magic fish and all the ducks had sharp beaks and thank God because some ducks had really big beaks before and now they have tiny sharp beaks.

Flora and Fauna

The richest plant growth is found in the sub-arctic belt, which includes only the very southernmost part of Greenland and the inner fjords. The greater part of Greenland, however, has diverse mountain vegetation, reminiscent of northern Scandinavia. In the driest inland areas, the vegetation is similar to that found in the mountainous regions of central North America.

Among the many different types of whale in the waters of Greenland are the fin whales, blue whales, humpbacks, narwhal, white whales, lesser rorquals, sperm whales and pilot whales. On a whale watching trip, it isn't unusual to see two different species, and meeting a humpback with a tail up to 5 meters wide is an experience to be remembered.

Alaskan Legends and Mythical Stories

The Raven, incarnated as a young man, had paddled his canoe across a great body of water to ask a woman to marry him. She refused to be his wife, so he made her sink into the mud and disappear; and then he began paddling back home. The woman's mother kept two brown bears, and in her anger she told them to drown the young man. They dug furiously at the lake's edge, making huge waves everywhere on the water. But Raven calmed a narrow path before him and paddled on.

Eventually he became exhausted, so he threw a harpoon that struck the crest of a wave. At that moment he fainted from the intensity of his concentration, and when he awoke a forested land had replaced the water.

He saw that the first wave his harpoon had struck had become a small mountain. Then it had glanced off, eventually striking a huge wave that solidified into another mountain - the one now called Deenaalee, or Mount McKinley.

Some tribes also believed that if the man wanted to, he would make the woman take a newborn baby out on the ice and leave it to freeze to death just after birth, if he didn't want the baby for some reason. Perhaps the baby was clearly not well or they couldn't hope to feed it.

Some tribes, especially in the interior of Alaska, believed that the raven created the world and that the raven has mystical powers and is at the same time clever. The raven is also believed to be very bold and a scavenger, as it can be seen easily stealing a kill from a pack of wolves or from a grizzly bear. Many believe the raven comes to someone who is getting ready to pass on, in order to take them there. Ravens are a protected bird in many areas of Canada. Ravens have been known to copy hundreds of sounds, some even sounding like machines they've been around.
